Here are some things to do with cream cheese...both of which we enjoyed sampling last Wednesday night. Thanks again Kathy!
Cream cheese candy:
2 oz of cream cheese (room temp)
1/4 to 3/4 tsp of flavoring
food coloring
1 2/3 cup unsifted powdered sugar (for starters)
Mix until blended, knead in more powdered sugar until the mixture is firm
enough to mold.
Roll in small balls ... or long strands and cut to size. (makes 50)
(I cut them and pressed each on with my finger -- after I dipped my finger
in granulated sugar)
Let dry over night and then turn them over to dry on the other side.

Individual Fruit Cheesecakes:
24 vanilla wafers
3 (8 oz) packages of cream cheese, softened
1 cup sugar
1/4 tsp nutmeg
1 tsp vanilla extract
3 eggs
One can of whole cherry pie filling
Heat oven to 325F.
Line 24 muffin pan with 24 paper cupcake cups.
Place 1 vanilla wafer in the bottom of each cupcake cup.
In a large bowl, combine cream cheese, sugar, nutmeg, vanilla, and
eggs.
Mix at medium speed until smooth, scraping sides occasionally.
Spoon mixture into cupcake cups (to about 2/3's full).
Bake for 20-25 minutes or until very slightly brown on top.
Cover pan and refrigerate over night. (Can be made to this point one
month ahead and frozen.)
Before serving, remove paper, and bring to room temp.
Spoon cherries
on top, just before serving.
*** another fruit option is a slice of kiwi, and spoon over that with
melted apricot preserves,
uses 3 kiwis and 1/2 cup preserves ***
Okay, I'm hungry :0)
